The equipment used to make beer in the beer tank will produce a large amount of organic matter such as protein, hop resin, polysaccharide, yeast and inorganic matter such as calcium oxalate and sulfate during the fermentation process. After the beer tank is emptied, organic matter and inorganic matter dirt adhere to the wall of the tank, showing a yellow brown color. In large quantities, the tartar surface appears white, like a saline-alkali surface, and inorganic and organic matter are interwoven. In the daily production process of each brewery, although cleaning and sterilization are strictly implemented in accordance with the established process, but because of the production pipeline inflection point, long line, tank scrubber aging, blockage, pump pressure is not compatible and many other factors, it is difficult to clean all parts of the pipeline, tank interior, especially some dead corners. However, local cleaning is not clean, which will eventually cause microbial outbreak of the whole system over time and seriously affect product quality.
Cleaning in the brewing and beverage industries is usually done in the hope of greater automation, saving time, efficiency and manpower. (6) After cooling, remove the lye from the tank. Rinse the residual lye in the beer tank with clean water, and the PH is neutral.
(7) Add acid washing liquid to clean. Rinse the residue with clean water, PH is neutral.
(8) After cleaning, restore the beer tank and pass air into it to check whether there is leakage in the pipeline and tank.
In the process of sterilization, when the jacket passes through the steam preheating, the inlet pressure must be controlled within the working pressure range of the equipment (should not exceed 0.2MPa), otherwise it will cause damage to the beer tank. In empty and solid elimination, it is necessary to drain the remaining water in the jacket of the beer tank. Otherwise, the cylinder in the beer tank may be flattened and the equipment may be damaged. In the elimination, will also cause too much condensate resulting in dilution of the culture medium, so as to not meet the process requirements.
